BIRD'S NEST COOKIES

Hello Friends!

I want to introduce you to a family favorite, once-a-year treat tradition!

My family has been making these since I was a tiny girl; and the only time we got to make them, was once in the spring. This year, I have already broken tradition by making them twice in two weeks. They always disappear quickly, so with just one batch, we didn't get our fill. :)


COOKIES
1 c. Butter
1/2 c. Brown Sugar, firmly packed
2 Egg Yolks (save the whites)
1-1/2 t. Vanilla
2-1/4 c. Flour
1-1/2 c. Chopped Walnuts (or Pecans)

Cream butter with brown sugar, then stir in egg yolks and vanilla. Mix in flour, half at a time, to form a stiff dough. Roll dough into 1" balls and set aside.
In a separate bowl, beat egg whites till foamy. Dip each cookie ball into the egg white, then roll in chopped nuts. Lay out on cookie sheet and press thumb into center of ball. (This will form a place where the eggs can sit).
Bake at 350 degrees for 12 min, or until lightly golden.
When cool, place frosting eggs in each 'nest.'


FROSTING EGGS
2 T. Butter
3 T. Light Corn Syrup
1/2 t. Almond Extract
2 c. Powdered Sugar
2 drops Blue Food Coloring
1 drop Green Food Coloring

Cream butter until soft; mix in other ingredients until smooth. Break of 1/2 teaspoonful at a time and roll into egg shapes. Place 2-4 'eggs' into each nest.
